Inspired by the natural produce, flavours and terroir of the island, we have been incorporating the essence of Ibiza in our locally produced dishes for over 15 years, to a discerning global clientele. From the pine needles of the forest, to the fennel and hibiscus flowers of the meadow, through the almond and orange groves, whose blossom signals the change from winter to spring. We explore this rich cuisine that has been influenced by many cultures over time, mixing ancient rituals of grain and wood fire cooking, with modern styles and techniques.
